Oscar and Francisca Chacón have been producing specialty coffee in Costa Rica through their famed Las Lajas micromill. Here, they have pioneered honey and natural processed coffees from the region, including experimenting with techniques to dry their coffees, leading to this Alma Negra lot.
For this process, coffee cherries are dried on raised beds during the day, but moved to a greenhouse at night. The cherries are also layered on top of each other to prolong the time it takes to dry, intentionally lengthening the drying process and creating new flavors in the cup.
The coffees from Las Lajas have amazed us for years now, and we're so excited to bring this coffee back this year. In the cup, we taste ripe berries like blueberry and strawberry, with a high quality cacao complexity.
