Olvin Fernández has been one of our longest-standing producer partners, with 2015 marking the first year we began purchasing his coffee. Based in Las Flores, Honduras, Olvin processes his coffees at a shared mill used by his farm and those of his brothers.
On Olvin’s farm, this field blend of Catuai, Bourbon, and Pacas is grown with careful attention to ripeness and processing. The coffee is fully washed and dried in parabolic dryers, resulting in a cup that emphasizes clarity and structure.
In the cup: Balanced and approachable, with a rounded sweetness and clean finish. Notes of green pear lead the profile, supported by rich butterscotch sweetness and a smooth, round body.
