Adrian and Nestor Lasso run El Diviso in Colombia, near the town of Bruselas. Here, the brothers produce coffee that has become known worldwide, winning championships year after year.
The Lasso brothers grow this variety of coffee called Ombligon, believed to have Ethiopian landrace ancestry, and now growing on steep hills at El Diviso. The farm has become famous for its innovative processing methods and ability to create complex flavor profiles. Utilizing mosto, or the liquid containing native yeasts and bacteria naturally present on the coffee fruit, the Lasso brothers use a machine called a Biomaster to control temperature, pressure, and pH levels, all with the aim of creating vibrant flavors in the resulting cup.
We competed with this coffee to take first place in the United States Barista Championship this year. In the cup, expect vibrant cherry and raspberry flavors, with subtle rose and hibiscus florals as the coffee progresses.
