Olvin Fernandez produces coffee in the Las Flores region of Honduras, and shares a mill centrally located between his farms and those of his brothers. We have been fortunate enough to purchase coffee from Olvin since 2015, and, starting in 2019, have begun purchasing variety-separated lots of coffee based on cup profile, such as this Catuai variety. Olvin’s coffees are fermented in concrete tanks, and dried on parabolic driers.

Most of the coffee Olvin produces is Yellow Catuai, which ripens yellow (hence the name) and makes for a beautiful sight to see across the sprawling hills of his farm, Mi Paz. Catuai is an important variety in the Santa Barbara region - it was first cultivated commercially in Honduras, and bred for high yields. However, with the care and attention of Olvin and other producers, we are able to experience the quality and sweetness that this variety from this region can offer.

This is an incredibly satisfying coffee, full of familiar and present flavors such as the sweetness of red apple and pear, and the airiness and candy-like qualities of nougat. In the cup, we find predominant flavors of milk chocolate, cooling to a complex, fruity, dark chocolate.
