The department of Huila is home to some of our most memorable coffees, with coffee producers often working in cooperatives to share resources and produce larger lots of coffee. This coffee comes from Cadefihuila, which is an association assembled of different cooperatives and represents over 50 years of coffee producing in the region. Cadefihuila offers business support, training, health care, and education to its members.
Among the more than 4000 coffee grower members is Rosalba Mateus Guerrero, who produces this lot of coffee. The Castillo variety is readily found in Colombia, due to its yields and resistance to coffee diseases, but has also proven itself to have potential for great cup quality. Processed as a washed coffee, this coffee also undergoes a 60 hour fermentation before being dried on parabolic driers.
In the cup, we find dark chocolate and stone fruits such as cherry and plum, with a dense sweetness like that of caramel or butterscotch.
