We’ve been purchasing Pablo Cruz’ coffees for the past three years now, along with several other Honduran producers through Beneficio San Vicente. Owned by Benjamin Paz, Beneficio San Vicente handles milling and processing for many coffee producers in the Santa Barbara region of Honduras.

Pablo’s home and farm are located in the Las Minitas region, where he has three drying beds and a fermentation tank. He built a new mill on his farm to process his coffee, and he tells us this was possible because of the premiums we paid for his coffees. He also hopes to purchase a truck to help with the two hour trip into town transporting coffee on the back of a mule.

Pablo’s washed Catuai production has been a mainstay of our offerings list for the past few years. His washed Catuai coffees have been exponentially increasing in quality from the first years we tasted Pablo’s coffee. This coffee is full of rich sweetness, complex fruit-like acidity, and a flavor profile only found in coffees from Honduras.
